西葫芦放久了苦了还能吃吗?刚才吃了个苦的西葫芦,有点担心,查一下网络。

网上说,西葫芦放久了苦是因为葫芦素(cucurbitacin)水平升高了。葫芦素是苦的,对细胞是有害的,最好别吃,严重的还会中毒。葫芦素水平增加与西葫芦的年龄、逆境协迫及生物因素(如基因型等)有关。
