牛乳房炎始终是奶牛养殖业中最具经济危害性的疾病之一,亟需创新且综合的防治方案。多学科协作模式为攻克这一重大动物健康问题提供了路径——从基因组学与流行病学研究起步,逐步推进至实践干预措施,最终实现对乳腺炎的认知与治愈。基因组流行病学运用基因组数据集追踪疾病传播路径,解析影响疾病发生与扩散的遗传因素。该方法有助于发现牛群中导致乳腺炎易感性或抗性的遗传变异——这种高成本且普遍存在的乳牛乳房炎症,其健康影响体现在产奶量、繁殖力及健康状况等可量化指标上,从而为评估干预措施和治疗方案奠定基础。此外,基因发现涉及识别与抗乳腺炎相关的特定基因或标记物,为遗传选择奠定基础;而实践解决方案则指将研究成果转化为实际育种计划、诊断或管理政策,以降低乳腺炎发病率,实现基础科学与农业的衔接。该技术为兽医、农民和育种者提供基因组工具,在提升动物健康与生产力的同时,有效减少乳业的巨大经济损失。
基因发现是该方法的基础环节,通过鉴定一个或多个基因,或识别参与乳腺炎引发的免疫反应与组织修复机制的基因网络,这些发现将成为遗传选择、疫苗制备及治疗干预的靶点。此外,功能基因组学、转录组学和表观遗传学分析将继续为乳腺炎发生与消退的分子机制提供创新性见解。健康指标是评估乳腺炎影响的核心依据,涵盖乳产量、体细胞计数、受孕率及慢性感染等可量化健康表现参数。通过基因组特征与健康记录的匹配,可实现基于持续时间的效应大小比较,并开发价值导向的精准干预方案。该技术不仅能优化治疗干预方案、降低抗生素使用量,更能减少抗微生物药物耐药性风险。育种者可运用基因组选择工具、基于基因标记的快速诊断试剂盒,以及针对个体动物基因型定制的牛群管理策略。将这些基因组学洞见与精准畜牧技术(如传感器监测和自动化数据采集系统)相结合,有望为农场实时决策铺平道路。

乳制品领域是一个不可或缺的研究方向,具有巨大的创新潜力。乳制品种类丰富,从巴氏杀菌乳到乳蛋白、奶酪、冰淇淋等加工产品不等。由于牛奶中营养物质对热敏感,传统的热加工方法在商业化应用中往往会降低乳制品的品质。因此,越来越多的研究集中在开发替代性新技术,这些技术无需传统的传导加热即可提升乳制品的安全性,同时保持其品质。此外,一些先进的新技术还具有环保特性,有助于实现可持续的产品开发。本特刊旨在呈现利用先进加工技术改善乳制品(如牛奶、奶酪、奶油、黄油、冰淇淋,以及发酵或培养乳制品如酸奶和分离乳成分)安全性与品质的最新研究进展。
本特刊的范围包括研究多种新型加工技术(无论是对乳制品的直接处理,还是对牛奶的预处理以生产乳制品)对乳制品理化性质、微生物特性、感官品质、营养价值及功能特性的影响。
通过本特刊,我们希望提供关于利用先进技术加工乳制品以提升其安全性和品质的最新发展与创新的全面概览,同时邀请讨论该领域前沿技术影响的原创研究论文和综述文章。
本期特刊议题包括但不限于:
Investigating alternate thermal processing approaches such as Microwave, Ohmic heating, Oscillating magnetic field, and Radiofrequency on the microbial safety and nutritional, and sensory quality of various dairy products;
Determining the influence of nonthermal processing technologies such as cavitation, high-pressure processing, UV-radiation, pulsed electric field, cold plasma, and irradiation on safety and nutritional, and sensory quality of dairy products;
Identifying the influence of various advanced processing technologies on the structural changes of dairy proteins using techniques such as AFM, DLS, FTIR, Circular dichroism, Raman, NMR, and fluorescence spectroscopy;
Studying the effect of advanced processing-induced protein structural changes on the digestibility, techno-functional properties, and hydrolyzing efficiency of dairy proteins and products;
Investigating the influence of advanced processing techniques on the immunoreactivity of dairy proteins and products using techniques like SDS-PAGE, Basophil activation test, Western blotting, Fluorescence spectroscopy, and ELISA.
